7UP Cake *Carbonated soda, or as we say here in Pittsburgh — soda pop — has been used in baking and grilling recipes for almost as long as the fizzy beverages have been available. In a pinch, soft drinks can stand in for baking powder or baking soda as a leavening agent, helping a cake to rise.* For cake: 1½ c. margarine or butter (3 sticks) 3 c. sugar 2 T. lemon extract 5 eggs 3 c. flour ¾ c. 7UP or lemon-lime soda For glaze: 3¼ c. confectioners’ sugar 1 tsp. vanilla 3 T. lemon juice ¼ c. cold 7UP or lemon-lime soda Preheat oven to 325°F. Grease and flour a Bundt pan. Using an electric hand mixer, beat the sugar and butter until creamy. (I used my KitchenAid mixer.) Add lemon extract and mix. Add in eggs, one at a time, and mix. Add flour and mix until well combined. Add 7UP and mix for 1 min. Scrape down the sides of the bowl and mix for an additional 1 min. at low speed. Pour batter into a well-greased jumbo ring cake pan. Bake for 1 hr., or up to 1 hour and 20 minutes. (A toothpick inserted in the center of the cake should come out clean.) While the cake bakes, make glaze. Using an electric hand mixer, combine powdered sugar, vanilla, lemon juice and 7UP. Beat until smooth. Let cake stand in the pan for about 10-15 min. to set. Then invert cake onto a plate or platter and remove pan.
