So I wanted to share a little update and some advice about my new Instant Pot. 🍲 I was so excited to get started that while I learned how to operate it, I didn't pay much attention to how bone broth should actually be prepared in a pressure cooker. That mistake (kind of) ruined my first batch, so I wanted to share what I learned. For my first batch, I used the exact same recipe I had always used for a 24-hour crockpot simmer. It included carrots, onions, ACV, and celery, and it always turned out amazing. The broth was rich, meaty, had so much depth of flavor, and honestly tasted so good that I would actually crave it. Then I made my first Instant Pot batch. It tasted awful. 😭 The best way I can describe it is that it tasted like Campbell's soup broth. It had this sickly sweet, canned soup flavor that was completely different from what I was used to. At first I thought, "Did I invest in the wrong cookware?" I was seriously so disappointed because we don't just spend money "willy nilly." After doing some research, I learned that the difference comes down to how the two cooking methods work. A crockpot slowly releases steam over time, while an Instant Pot cooks under pressure and keeps that steam trapped inside. When vegetables are pressure cooked for that long, their sugars become much more concentrated, which can overpower the broth and give it that sweet flavor instead of the deep, hearty, meaty flavor I was looking for. The fix was actually pretty simple. Now I pressure cook the broth using only bones, water, and a splash of apple cider vinegar for about 4 hours. This uses pressure to get all the good stuff out. After that, I switch to the sauté setting and let it cook uncovered for about an hour. This finishes it, allowing for the release of the steam. If you want vegetables, this is the stage where you can add them in for flavor. However, we decided not to because we were trying to recreate that rich, meaty flavor we loved from the crockpot version. I was so relieved when the second batch turned out exactly the way I wanted. Same deep flavor, same richness, and no sweet canned soup taste. My biggest problem now is keeping up with the bone supply because we go through broth faster than I can make it! So far, we've used the Instant Pot for bone broth and for quickly cooking beets (which take about 20 minutes), and I've been really happy with the purchase.
