On Sunday nights, we usually stop by Whole Foods and Natural Grocers to see if there are any good clearance deals. This week we scored! ๐ Natural Grocers had air-chilled chicken roasters marked down to just $5 each, and we bought a bunch of them, so today we wondered, could we cook one in the Instant Pot? When I first started researching Insta Pots, I found a lot of people complaining that pressure-cooked whole chickens came out dry, so I wasn't convinced. Then Harry found a YouTube video where a woman cooked a roaster in her Instant Pot for about 25 minutes of pressure cook time, followed by a 10-minute natural release. Not only was the chicken tender, juicy, and flavorful, but we didn't have to turn on the oven - A huge win during an Arizona summer. โ๏ธ The best part? Since you add about a cup of water to the Instant Pot and the chicken releases its own juices, I ended up with a tasty homemade chicken broth. I tossed in some chopped carrots, celery, onion, and potatoes, pressure-cooked for just 5 more minutes, quick-released, and added some of the shredded chicken back in and set to warm. Instant homemade chicken soup. The broth was rich and meaty, and the soup honestly tasted like it had simmered all day. Now, the reason I'm sharing this is that I was never a crockpot person. I always thought slow-cooked meals had a certain taste that I wasn't crazy about. That has not been my experience with the Instant Pot at all. No weird "slow cooker-muted-musty flavors." Everything tastes fresh, bright, and surprisingly flavorful. I think it's due to the stainless steel! ๐๐ผ So in less than an hour, we made a whole roasted chicken, homemade chicken soup, and we'll even use the bones next for a pressure-cooked bone broth. Quick, easy, delicious, no heating up the house, and making the most of a $5 clearance chicken.
