One unexpected positive from having to drive back to Chicago was being able to pick up the beef tallow we had accidentally shipped there. Since then, I've been using it for almost everything that would normally call for olive oil or butter. I've used it for baking, glazing buns, frying eggs, greasing pans and muffin tins --you name it. When baking, I generally substitute it 1:1 for butter (tablespoon for tablespoon), and it's so clean tasting that I don't notice any altered flavors in the finished product. Another thing I love is that I don't have to keep running to the store for butter. We bought 7 pounds of beef tallow for $54.95, which works out to about $0.49 per ounce. (For comparison, a quality butter often costs quite a bit more per ounce.) The 7 pounds is going to last us a long time. We keep it in the fridge and just scoop as needed.
