THE SOUP TALK IS IN THE SECOND PARAGRAPH. Now look, I don't like to burden my friends with my problems (pause for laughter), but my refrigerator had a seizure on the day before Christmas. We used three large coolers and many, many bags of ice until the repair man could get here 3 days later. Of course, all that food was in an iffy state by that time, despite our diligence in maintaining an unbroken cold chain. I saved a few things, including frozen butternut squash chunks and a small bag of sweet potato pieces. When I pulled those two packages out today, they were melded into solid, frozen lumps rendering them useless for anything except soup. Looking down at the two orange ice blocks and recognizing that the only choices were to throw them out or to make orange colored soup, I decide to go all out. One carrot, some orange lentils and a bit of turmeric (plus other spices) and tow frozen lumps later and here we have the most delicious soup. It's very rich, very fragrant, very satisfying and 100% no fat no diary vegan. Plus, it's got little feta and olive boats floating on top. What's not to love? #Soup #WFPB #WFPBNO #Ornish #Vegan
