Also, if anyone has puttered around with potatoes, I hear some are better than others hydrated. I usually grow red Pontiac but have grown others. Let us know your experiences with freeze drying then hydrating your kind of potatoes (hydrated crispy, rubbery, mushy, and don't forget to tell us the name of the potato)
