we continue sharing popular recipes and tips like he did: the classic recipes, elegant meals, comfort foods. For fun. To share a meal, break bread, with family, friends, or strangers who are friends you just hadn’t met yet. Chatting with ppl in this gab group gave David a reason to get up every morning and help them learn to cook. Typing on the keyboard hurt his hands
which were wounded in Vietnam and worsened with peripheral neuropathy as a diabetic - but that did not stop him from chatting with anyone who visited his group.

New Years Tradition:
Hoppin John
YIELDS: 10 serving(s)
PREP TIME: 6 hrs
COOK TIME: 1 hr
TOTAL TIME: 7 hrs
Ingredients
4 tbsp. butter
1 large onion, diced
4 cloves garlic, minced
1 green bell pepper, diced
2 stalks celery, diced
1 lb. dried black eyed peas
5 c. low-sodium chicken broth, plus more as needed
1 whole ham hock
Kosher salt and pepper, to taste
Cayenne pepper, to taste
2 tbsp. white vinegar
White or brown rice, to serve
Directions

Soak the black-eyed peas in cool water for at least 6 hours. Rinse before using.

Heat the butter in a large pot over medium-high heat. Add the onion, garlic, green pepper, and celery, and stir. Cook for 3 to 4 minutes. Stir in the soaked beans, then add chicken broth and ham hock as well as salt, pepper, and cayenne, to taste. Bring to a boil, then reduce the heat and cover the pot for 30 minutes.

After 30 minutes, check the liquid level; if it's too soupy, cook with the lid off for another 15 minutes or so. If it's too thick, splash in a little more broth. Stir in vinegar, then taste for seasonings. Add more spice if needed.

Serve over white or brown rice, making sure to get plenty of the cooking liquid spooned over the top. Or, you may mix the bean mixture with the rice before serving.

Variations: Add red bell pepper, canned diced tomatoes, diced jalapeños, diced ham (instead of ham hocks), or sliced bacon (instead of ham hocks). Stir in torn-up kale when 5 minutes of cooking time remain. You can also use canned, drained black-eyed peas if preferred. Just use diced ham instead of ham hock and a little less broth, as peas won't need to cook as long.

(Note: I substitute a ~14 oz. can of coconut milk plus a can full of mineral water to rinse it out, and yes that’s only 28 oz of liquid v 44 oz in 5 1/2 cups so it makes a denser rice pudding. It stores well. I add extra cream to the bowl when I serve it. It’s a forgiving recipe)
2 cups short-grain white rice
(Note: I substitute short or medium brown rice and the rice cooker adjusts the approximately twice as long cooking time for whole grain brown rice, 40 minutes)
(Note: add 1/4 tsp Himalayan sea salt)
1 cup sugar
(note: try natural coconut sugar, monk fruit, or stevia and reducing amount to taste. If you want to use this rice for other uses such as dinner side dish, don’t add any sweetener while cooking, but instead sweeten the pudding in your bowl of rice pudding RN)
½ teaspoon ground cinnamon
2 ½ cups milk
(Note: or use more coconut milk or cream, or dairy full cream or half and half)

(Note: Some ppl like to add fine grated dried toasted coconut, dried fruit such as raisins, currents, cherries, apricots, before or after cooking, depending if you like them plumped up)
