I decided to forgo the white chocolate coconut pie because it was really too sweet. So this is what I worked on towards this upcoming pie contest. I had neighbors taste test it today. All tasters said it needed no change. Coconut shortbread crust. chocolate coconut filling. Stabilized whipped cream and coconut flakes.
