*If you're looking for another great side dish for your Thanksgiving table, Chef Terranova gets sausage, a nice loaf of French bread and other ingredients from Dave's Marketplace for a tasty, fluffy dressing.* Fluffy Sausage Dressing 2 (12-oz.) loaf French bread 1 lb. breakfast sausage (recipe below) 1/2 c. salted butter 1 yellow onion, chopped 5 stalks celery, peeled and diced 2 cloves garlic, finely chopped 2 1/2 tsp. kosher salt, + more to taste 1 tsp. freshly ground black pepper 1/2 c. white wine 4 c. chicken or turkey broth 2 eggs 1/4 cup chopped fresh parsley 1 tsp. chopped fresh rosemary 1 T. chopped fresh sage 1 tsp. fresh chopped thyme Fresh American sausage: 1 lb. of fresh ground pork 1 tsp. salt 1 T. minced sage 1/4 tsp. fresh grated nutmeg 1/2 tsp ground coriander 1/2 tsp. red pepper seeds. Combine all the ingredients and using your hands mix well, cover and refrigerate overnight to the flavors will meld. Preheat the oven to 300°F. Cut all the bread into 3/4-inch cubes. Divide the bread between two baking sheets. Toast the bread in the oven until evenly dry, 35 - 40 min., stirring every 10 min. Allow to cool completely. Place the dry bread cubes in a very large bowl. Increase the oven temperature to 375°F. In a large skillet, cook the sausage over med/high heat until brown and crumbly, 5 - 7 min. Remove the sausage to the bowl with the bread cubes. Do not wipe out the skillet. In the same skillet, melt the butter over medium heat until foaming. Add the onion, celery, garlic, salt, and pepper and cook until translucent, 3 - 4 min. Add the wine and cook until it is reduced by about half, 2 - 3 min. Add the broth, parsley, sage, and thyme, and stir. Slowly ladle the broth mixture onto the bread cubes, tossing the mixture frequently for even coverage. Taste for salt. Spray a large casserole pan with cooking spray. Spoon the dressing into the prepared casserole pan and/or the turkey cavity. Bake the casserole for 20 - 30 min. until golden and crisp on top.
