Does anyone know if a persimmon salsa can be canned? It looks like we will have a bigger harvest of Fuyu Persimmons this Autumn; not many persimmons last year so I simply dehydrated them. I've been searching and although I can find peach salsa canning recipes, I have yet to find canning instructions for persimmon salsa. Can I just can it like a peach salsa? Has anyone done this?
