My latest addition to my smoking collection. The smoking tube for pellets (or chips). I've been wanting to cold smoke cheese, and now it's on like Donkey Kong! My first smoke. I've got Z Grills pellet smoker. I've placed the smoker tube under the heat shield for deflection. I ended up having to place a pan with ice in it to keep the temperature below 90 degrees. I'm not running the smoker, just using it as a cold smoke chamber. Here I have 2 year aged extra sharp Tillamook yellow cheddar, and 7 years aged extra sharp Tillamook white cheddar. It's very crumbly. I did a 3 hour smoke with Hickory, Apple, and a bit of Cherry pellets. I've vacuum sealed these up and will rest them for 30 days. I can't wait. Look at that color. I just ordered more of these wire racks to hold the cheese so I can load up my smoker. I'm going to buy a 5lb block of Tillamook medium cheddar and cut it up into a bit thicker pieces than this and smoke them. This is what I'm gifting for Christmas to friends and family this year. Damn I love smoked cheese. I should have done this years ago. But I didn't know how. Also, I'm going to start using the smoke tube in a lot of my smoking on the pellet grill. I've just not been happy with the amount of smoke flavor I've been getting. This will help a lot.
