I'm calling this my "Maker's Reserve". 7+ years aged Tillamook Extra Sharp White Cheddar. 5 hours cold smoked with Hickory & Cherry (70/30). Paper towel next to it for color comparison. Some of these chunks cracked, but I'm sealing them as they are. Some of these will be gifts for select friends that will truly appreciate these. At least half is mine. This is 10 pounds here. I've already smoked 10 pounds of medium cheddar. Most of that is going out for gifts. My Christmas gifting will be easy this year. Plus this is way more personal.
